The exclusive recipe, which includes hand-rolling the edge in crunchy demerara sugar to deliver a crunchy texture, is still baked today as it was by Joseph Walker in 1898. Our Highlanders were also awarded a Superior Taste Award at the esteemed iTQi ceremony in June 2015.
